This is me in 2008. I'm over weight and diabetic. My blood glucose was well over 400ng/dl. I had lost some weight over the last couple of years but still had blood sugar issues.
The medical doctors wanted me to take a diabetic medication so I did for several months. I gained 15 lbs and 3 inches on my waist. I wasn't happy about that...

I've been doing this wheat free diet and am very pleased with my results so far. I am mostly interested in lowering my blood sugar levels and figure the weight loss will happen as I lower my blood glucose levels. I discovered that there is more to it than that. I need to also pay attention to my estrogen levels. Estrogen is what causes chest fat in men. (Man Breasts) Well what guy wants those. Not Me! So you would think that exercising the upper body and chest muscles will get rid of them. NOT TRUE! Oh, the exercise builds chest muscles but it does nothing to remove the layer of breast tissue laying over the muscles. Bigger chest muscles only make the Breasts look bigger.
To remove the breast tissue you need to remove the estrogen hormone that triggers their growth.
Some foods cause more estrogen build up in the body. Foods like soybean products such as tofu and soy milk, lima beans, papaya, dates, plums, pomegranates, beets, eggplant, tomatoes, yams, olives, potatoes, barley, rice, hops, oats, wheat, chickpeas, garlic, parsley, clover, split peas, sprouts and licorice.
Some foods reduce estrogen in the body and these foods are what you want to then remove Man-Breasts and belly fat.
1. Meet the Cruciferous vegetable family! They are broccoli, cabbage, kale, brussels sprouts and cauliflower. This family of vegetables contains sulfur compounds (can be gas forming) and indole-3-carbinol. These guys bind to estrogen and escort it out of the body.
2. Green leafy vegetables! Spinach, celery, rucola, parsley, dandelions, Swiss chard help remove estrogen as well.
3. All of the citrus fruits; lemons, oranges, grapefruits (ruby red and yellow), mandarins, tangerines, pomelos, and limes. Citrus fruits contain d-limonene which helps detoxify estrogen. The d-limonene oil is in the skin so eat the skin. Be sure it is organic so avoid the pesticides that contain xeno-estrogens.
4. Sesame seeds and flax seeds contain estrogen binding lignans. Aim for two to three tablespoons a day. (Tahini butter is sesame seed and can be used in salad dressings if melted)
5. Insoluble fiber found in apples binds to estrogen in your small intestines and stops it from being absorbed. That way you can reduce your exposure to xeno-estrogens from your diet. (Apple fiber is best) A teaspoon a day is good.

I started to read a book called "Wheat Belly".
One paragraph from the book: To many of us are stricken with an unsightly belly, only to blame ourselves. To many calories, to little exercise, and to little restraint. But it's more accurate to say that the advice we've been given to eat more "healthy whole grains" has deprived us of control over appetites and impulses, making us fat and unhealthy despite our best efforts and good intentions.
I liken the advice to eat healthy whole grains to telling an alcoholic that, if a drink or two won't hurt, nine or ten may be even better. Taking this advice has disastrous effects on your health. Another doctor said I should try using insulin injections to take the sugar out of my blood stream. I did and gained more weight. ARRRggg!
That was frustrating and seemingly useless.
I asked the doctor to prove I needed insulin since he said I didn't have enough to keep my blood glucose under control. Do the test and prove I don't have enough insulin. He was very reluctant to do so but I insisted.
As it turned out my insulin level was 8 times higher than normal. I quit taking the injections.
I had insulin resistance which is different from diabetes.
Doctors assume that if your blood glucose level is elevated you are low on insulin. That is true, sometimes, for juvenile diabetes. But not for Adult onset diabetes. The only way to know for sure about your insulin levels is to test your fasting insulin levels.
I always say: "If you are not testing, You're guessing!"
Normal insulin levels should be below 10 with 5 being best.
I have always said: "If I can find the cause for being diabetic I will fix it for myself."
You know, when you ask for help about something you have to remember that there is supposed to be an answer given after you ask. Most people don't really believe they will get an answer so they don't take time to listen for one.
I listened! One day someone posted something about the book "Wheat Belly." It sounded interesting so I bought a used book on Amazon.com.
I read the book and realized it was the answer about my diabetes. Of course it meant many changes in my eating habits if I wanted the success, others experienced, in weight loss and improved health.

Well I finished the book "Wheat Belly" & have to say that it surprised me that wheat causes so much damage to our body's.
Stopping wheat in our diet should be something everyone should consider. I am on my first 5 days going almost wheat free. Not there yet but each day brings new opportunities to succeed. Today was a good day. I made it the whole day without wheat...
Persistence will pay off. If you are trying the wheat free change let me know how you are doing. Remember wheat is like a heroin addiction. It will be a challenge to reach your goal but well worth it if you are diabetic or gaining weight around the middle...
OK now I'm getting in to the good stuff I didn't know before.
Wheat's effects reach the brain in the form of opiate-like peptides. But the exorphins (heroin like substances) come & go with your wheat consumption. Exorphins cause your brain to instruct you to eat more food, increase calorie consumption, & hunt for bread & other carbohydrates when you are trying to lose weight.
All of these effects are reversible by stopping the wheat consumption.
There are other disturbing effects on the brain like loss of proprioceptive ability (your ability to navigate in familiar places), memory, dementia, seizures, & many brain related disorders.
Am I making the case for us to remove wheat from our diets yet? I started my wheat free trek 2 days ago. To early to share what is happening to me but I will soon.

Note: it is the elevated insulin levels, caused by wheat, that triggers the building of the bad cholesterol in the liver.
If you have blood sugar levels over 100ng/dl but below 125 then you are a pre-diabetic. If your blood sugar levels go over 125 you will be labeled a diabetic. If your triglyceride levels are elevated, along with low HDL & elevated LDL cholesterol, your insulin level is probably elevated. You can ask for a Fasting Insulin test from your health care provider. It will give the answer of why your triglycerides, cholesterol & blood sugar levels are elevated. Stop the wheat!...

When we eat fats in our diet our body's will shut down the production of fat building in the liver. This helps prevent an excess of cholesterol in the blood.
Here is the cholesterol story that gets all of us into trouble.
The cholesterol that creates problems for us is not from the fats we eat but from the carbohydrate foods we eat.
Carbohydrates are taken in by the liver & converted to the triglyceride number you see on your cholesterol test. The more carbohydrate food you eat the higher the triglyceride number. Triglycerides are then used by the body to build the the different types of cholesterol we use. For most of us it means the building of the so called bad cholesterol or LDL & VLDL types.
What food causes the highest production of these types of artery clogging cholesterol? You got it, Wheat! Just one more thing wheat does to your body that is not healthy...
As I am reading this book "Wheat Belly" I am reminded of something about the HbA1C test used with diabetics to determine what their average blood sugar levels have been over the past 60 to 90 days. A number below 4 is very healthy. Most have an HbA1C number below 5. The number represents a percentage of red blood cells that have been damaged by the glucose you have consumed. So the number 5 is really 5% which means 5% of your red blood cells have been damaged by the sugar in your body. (The carbohydrates you consume that get converted to glucose in your body)
5% or lower is considered to be normal. This "Damage" is what we call aging. We all AGE. It can't be stopped but it can be slowed down. The higher the % number in your HbA1C test the faster you are AGE-ing. AGE is an acronym which means Advanced Glycation End products. Glycation is a damage process in our bodies. Glucose causes this damage process as a part of aging. It is always happening to us but to some it is happening much faster. The higher the HbA1C % number the faster you are aging.
Wheat causes this number to rise faster than most other foods and it stays elevated longer as well. When carbohydrate foods are eaten our pancreas pushes out insulin in an attempt to move the glucose into our cells to make energy. As we get older, or produce more AGE products, it becomes more difficult for the insulin to carry glucose into our cells. This is called insulin resistance. It means your pancreas has to make a lot more insulin to move glucose into your cells. This battle with glucose continues until insulin becomes ineffective at moving glucose into the cells of your body. Now you are considered diabetic!
This damage is not limited to the red blood cells. It happens in the thyroid, pancreas, arteries, & all of the organs & tissues of the body.
Muscle tissue is the main source of energy production, after all we need muscles to move around. When our muscles can not take glucose in, to make energy, we are AGE-ing very fast. Not being able to burn up the glucose means that it has to be stored.
Belly Fat is produced as the unused glucose is stored. Now don't think "I'll just walk a little farther or do a few more sit ups or some other type of exercise" to use up those calories. You can't! Remember your muscles can't use the glucose properly. Doing a few more aerobic exercises will cause your muscles to break down. You can't burn glucose for energy so your body will burn the protein for energy. Your muscles will shrink. Don't believe me? Take measurements of your legs & arms today. Then measure again after a few weeks of exercise. You will discover that your muscle mass is less than when you first measured. You will feel like you have plateaued with your weight loss. Your energy levels will be depleted as you fight to get through the day. Need I say more. We have all experienced these feelings as we try to get "Healthy."
Do you know why your body doesn't build more muscle during your efforts to exercise?
Testosterone! That male hormone that triggers building.
You see Insulin is like the delivery truck. It brings the building materials, Proteins, carbohydrates, & fats to the cells. That is what insulin does! It delivers the building materials to your body. It isn't just about sugar control. BUT the workers are not on the job. Testosterone is the workers that trigger the use of all those building materials. No testosterone workers, no building.
So you have all of the stuff needed to build your garage but no one to build it. Now what?
The guy that brought all of the materials to build with says "I going to put these materials over hear. You can use them when you get around to it." So there is a pile of materials stacked up around your middle waiting to be used.
Getting the picture? If your testosterone levels are low, for a healthy guy or gal, your will not be able to use the nutrients that insulin brings to the job site, (your cells).
Wheat has damaged your ability to make many different hormones. Hormones are the messengers that tell the brain what to do. If your thyroid hormone, messengers, are deficient then you have temperature problems & all that goes with thyroid problems. Reproductive problems happen when we don't have hormones produced at healthy levels. Menopause!
Wheat increases the AGE-ing process in our bodies. We can reduce the speed of AGE-ing by taking grains out of our diet.
The HbA1C test shows how fast you are AGE-ing. You can buy this test at your local pharmacy or have your health care provider order the test. If your number is over 5.6% damage to your red blood cells you are aging faster than you should.
The higher the HbA1C the bigger the percentage of damage to the body. By the time a person is diagnosed as diabetic their HbA1C is upwards of 12% damage to their body. All because Wheat & low T prevent the proper usage of insulin... Exercise does not fix this problem... Getting off of the wheat does...
I've read about half of the book Wheat Belly & learned about all of the changes made to the wheat in the last 50 years. No testing to see if it is safe for human consumption. Just make genetic changes that prevent infestation & disease to the plant. They even get 10 times more yield per acre. I've also learned that we should know that the most dangerous part of the cookies we eat is the wheat, not the sugar. Both raise blood sugar but wheat raises it more & does damage to the digestive system & body to boot. That leads to diabetes & dozens of other serious autoimmune diseases. I am a cookie monster. I like sandwiches with soup for lunch or snack. There is clear understanding from the research that wheat has been causing me health problems for over 50 years. I hope that I can break this addiction. I hope that you can too...
When we take in a substance like heroin it is easy to become addicted and want more of it. Well wheat, even the slightest amount, triggers the same response as it takes up the same receptor sites in the brain. Is it any wonder that we have such difficulty removing it from our diets?
When the intestinal lining is broken down many diseases can happen. Just Google "Inflammatory diseases" & see how many there are. Wheat is not the healthy dietary substance we have been taught that it is. It damages your body on so many levels. Wheat gluten has a protein in it called gliadin. It is present in all forms of wheat. Whole grain to the fluffy white breads & pastries. This protein, gliadin, causes the intestinal lining to become mushy like over cooked noodles. They turn to mush and break apart when disturbed. When gliadins are present in your food they trigger the release of another protein, zonulin, from the intestine. This zonulin is what turns the intestinal lining into mush. The cells on the intestinal lining are no longer able to keep food particles from entering the blood stream.
When food particles get into the blood they trigger an immune response from your bodies defenses. The immune response triggers an attack on healthy tissues in the thyroid & other organs of the body & joints. This leads to rheumatoid arthritis & hashimoto's thyroiditis disease. Many other auto immune diseases may also occur as killer T-cells used to fight the invaders of food into the bloodstream, attack various organs & tissues of the body.
OH! a side note. Gliadin takes up the heroin receptor sites in the brain. It triggers the same euphoria as heroin. Is it any wonder that getting off of wheat is so difficult?

I make my own rice flour. When you buy rice flour it is made from the whole grain rice which contains all of the starch. Many other starches are added to the flour like tapioca starch and potato starch. This makes the store bought rice flour very high in glycemic index and glycemic load.
When I make my rice flour I use "Instant Rice." This is rice that has been blanched with hot water, steamed, and washed, to remove the starch, and then dried.
You can buy instant rice in grocery stores.
I put the instant rice into my blender or magic bullet and grind it until it reaches the consistency of flour. I make as much as I need for the recipe I am making.
Very quick and simple and my rice flour has a low glycemic index of 38 and a low glycemic load of 14.
Glycemic Index reflects how fast a carbohydrate food causes your blood sugar to rise. Glycemic Load tells how much, of a carbohydrate food, it takes to cause the blood sugar to raise.

When you buy coconut flour it contains 3 different starches. Potato starch, rice starch, and tapioca starch. These starches cause this flour to be high glycemic with a high glycemic load.
You can make your own Coconut flour by buying unsweetened coconut and grinding it yourself with you blender or magic bullet. Put 1 cup of coconut into your processor and grind until it has the consistency of the flour you want. There is some moisture in coconut so you may have to tap the bottom of the blender to get all of it out.
Make as much as your recipe calls for.

I got together with some friends and we made coconut flour. We experimented a little and toasted the coconut before grinding it in the blender. Toasting made it easier to grind. We got a finer flour also.
